Technical Document

Brief Overview Distilled monoglyceride is an organic compound that has the physical appearance of white beads. It is commercially prepared with the raw materials of vegetable and animal fatty oils. It is composed of glycerol linked to a fatty acid via an ester bond. Distilled monoglyceride is used as an emulsifier agent for mixing ingredients in the correct proportions. Manufacturing Process Triglycerides is interesterified with glycerol using a high-temperature catalyst to produce industrial monoglyceride. This reaction is glycerolysis and produces a mixture of 50% monoglyceride. This mixture is further distilled using the molecular distillation process to obtain distilled monoglyceride of minimally 90%.
